Most people when joining college are worried about the " Freshman 15". Gaining weight in college is something that everyone is scared for because now they don't have their parents there telling them what they can and can not eat. I believe that this is mostly due to the fact that schools may not have the money to pay for nice food which will help students eat as healthy as they do at home. Also, up at school the food is usually served in a buffet style which allows students to fill their trays and eat as much as they want. Also, alot of schools now have 24 hour dinning commons which lets student go for that midnight snack which they might not have gone for if the dinning common wasn't open.
Colleges and University's outside of the dinning commons have food places which students can get food at. Some Colleges and University's have places like burger king or taco bell on campus which allows student access to these fating foods everyday where if it wasn't on campus they may not have access to it.
I found that if students are educated on how to stay healthy and maintain their weight at school they might realize some unhealthy habits and make healthier choices.
On the following sites it talks about what kind of food you should be getting everyday and what you should avoid. Also in the fit day link you can enter the different type of food you eat and the activities which you do so it is easier to monitor yourself and keep healthy.

I have never gone away to college or lived on a campus, but know many people who have. Many people that go away I see them come home with extra weight. I think it may also have to do with change in activity levels. Some people change their exercise habits or discontinue a sport when they go away to school. I do agree that it is the food too! I had a friend go to UConn and was pretty much addicted to their mashed potatoes!
It is truly sad in my opinion that many Universities and Colleges do not use funds to provide healthier food alternatives for their students. It must be considered that there are many college students who are athletes or health conscious people who subsequently require healthy meals. When I walk into the Dining Commons every day, I am not always sure that there will be a relatively healthy meal available for me. However, I can always expect to see an abundance of pizza, burgers and fries every single day. Maybe instead of investing so much money in cheaper, more unhealthy options such as those, schools should attempt to put that money towards healthy food for a change.. Good article though.
Many of my friends live on campuses at their colleges, and do come back with a little more weight on them. They probable gain the weight because they do eat at a buffet. So they will eat and eat, they never eat a portion meal, like some of the people who commute to colleges. And like you said colleges are getting fast food restaurants on campus, most kids will be eating there many times during the week. It is also true that many people don’t know about eating healthy or making healthier choices.
